Sweet Butter Milk Muffins
Ingredients
- 2 large eggs, well beaten
- 2 tsp sugar
- 2 tsp butter, melted
- 2 cups milk
- 4 cups flour
- 2 tsp baking powder
- 1 pinch salt
Method
- 1 Sift the flour, baking powder, and salt together into a large bowl.
- 2 In a separate bowl, whisk the beaten eggs, sugar, melted butter, and milk until combined.
- 3 Pour the wet ingredients into the dry ingredients and stir gently just until moistened. Do not overmix.
- 4 Pour batter into greased muffin tins and bake in a hot oven (425°F) for 15-20 minutes until golden.
