Sweet And Sour Stir Fry Vegetables
Ingredients
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 teaspoon soy sauce (low sodium)
- 1/4 teaspoon fresh ginger, grated
- 1 cup canned pineapple, drained and chopped
- 1 tablespoon cornstarch
- 2 teaspoons oil
- 1 package (16 oz) frozen stir-fry vegetables
Method
- 1 Combine honey, lemon juice, soy sauce, ginger, pineapple, and cornstarch in a bowl; mix well and set aside.
- 2 Heat oil in a skillet over medium-high heat. Add frozen vegetables and cook for 3-4 minutes until crisp-tender.
- 3 Pour the sauce mixture over the vegetables. Cook for 2 minutes, stirring constantly, until the sauce thickens and comes to a boil.
- 4 Add a splash of water if the sauce is too thick. Serve immediately over pasta or brown rice.
