Sweet And Sour Pickled Green Tomatoes

Ingredients

  • 1 peck green tomatoes, sliced
  • 6 large onions, sliced
  • ¾ cup salt
  • 3 quarts vinegar
  • 2 quarts water
  • 2 pounds brown sugar
  • 4 teaspoons ground cinnamon
  • 4 teaspoons ground mace
  • 4 teaspoons ground cloves

Method

  1. 1 Combine sliced tomatoes and onions in a large bowl. Sprinkle with salt, mix well, and let stand overnight.
  2. 2 Drain the vegetables thoroughly. Place them in a large pot with 2 quarts of water and 1 quart of vinegar. Bring to a boil and cook for 15 minutes, then drain.
  3. 3 In a clean pot, combine the remaining 3 quarts of vinegar, brown sugar, cinnamon, mace, and cloves. Tie the spices in a cheesecloth bag.
  4. 4 Add the spice bag to the vinegar mixture and bring to a boil. Cook for 10-15 minutes to infuse the syrup.
  5. 5 Pour the hot vinegar mixture over the drained tomatoes and onions. Let cool, then bottle and store.
