Sweet And Sour Corn Relish
Ingredients
- 9 ears corn
- 1 quart vinegar
- 1 cup sugar
- 1 tsp salt
- 1½ tbsp dry mustard
- 1 tsp turmeric
- 1 medium head cabbage
- 2 medium onions, chopped
- 3 red peppers
- 2 green peppers
Method
- 1 Cook corn in boiling water for 2 minutes, then dip in cold water and cut grains from the cob.
- 2 Chop cabbage, onion, and peppers into small pieces and add to the corn.
- 3 Mix vinegar, sugar, salt, and spices; heat to boiling.
- 4 Add corn and vegetables to the boiling mixture and boil until tender, 20 to 30 minutes, stirring frequently.
- 5 Pour into sterile jars and seal.
