Sweet And Sour Corn Relish

Ingredients

  • 9 ears corn
  • 1 quart vinegar
  • 1 cup sugar
  • 1 tsp salt
  • 1½ tbsp dry mustard
  • 1 tsp turmeric
  • 1 medium head cabbage
  • 2 medium onions, chopped
  • 3 red peppers
  • 2 green peppers

Method

  1. 1 Cook corn in boiling water for 2 minutes, then dip in cold water and cut grains from the cob.
  2. 2 Chop cabbage, onion, and peppers into small pieces and add to the corn.
  3. 3 Mix vinegar, sugar, salt, and spices; heat to boiling.
  4. 4 Add corn and vegetables to the boiling mixture and boil until tender, 20 to 30 minutes, stirring frequently.
  5. 5 Pour into sterile jars and seal.
