Sweet And Bitter Almond Macaroons
Ingredients
- 9 oz granulated sugar
- 3.5 oz sweet almonds, skin removed and finely chopped
- 1.75 oz bitter almonds, finely chopped
- 2 egg whites
- Butter for greasing
- Powdered sugar for dusting
Method
- 1 Preheat oven to 350°F. Grease a baking tin with butter and sprinkle with a mixture of half flour and half powdered sugar.
- 2 Finely chop the sweet and bitter almonds. In a bowl, stir the granulated sugar and egg whites vigorously for about 30 minutes.
- 3 Add the chopped almonds to the sugar mixture and stir until a rather hard paste forms. If too soft, add a little butter; if too hard, add a beaten egg white.
- 4 Form the paste into small balls the size of a walnut and flatten them to about 1/3 inch thick. Place on the prepared tin, leaving space as they will swell.
- 5 Bake in the moderately hot oven until done.
