Sugar Rubbed Yeast Rolls
Ingredients
- 2 lbs fine flour
- 1/4 lb fresh butter
- 2 eggs, separated
- 2 tbsp sugar
- 2 tbsp yeast
- 1 pt milk
- Salt to taste
Method
- 1 Sift flour and sugar together. Rub in butter until mixture resembles coarse crumbs.
- 2 Mix egg yolks, yeast, and milk. Pour into flour mixture and work into a smooth dough.
- 3 Place dough in a warm spot and let rise until doubled in size.
- 4 Divide dough into 12 rolls. Place on buttered baking sheets and let rise again until light.
- 5 Bake in a moderate oven (350°F) for 30 minutes until golden brown.
