Sugar Rubbed Yeast Rolls

Ingredients

  • 2 lbs fine flour
  • 1/4 lb fresh butter
  • 2 eggs, separated
  • 2 tbsp sugar
  • 2 tbsp yeast
  • 1 pt milk
  • Salt to taste

Method

  1. 1 Sift flour and sugar together. Rub in butter until mixture resembles coarse crumbs.
  2. 2 Mix egg yolks, yeast, and milk. Pour into flour mixture and work into a smooth dough.
  3. 3 Place dough in a warm spot and let rise until doubled in size.
  4. 4 Divide dough into 12 rolls. Place on buttered baking sheets and let rise again until light.
  5. 5 Bake in a moderate oven (350°F) for 30 minutes until golden brown.
