Sugar Drop Cakes
Ingredients
- 3/4 cup sugar
- 2 egg yolks
- 4 tablespoons shortening
- 1 1/2 cups flour
- 3 teaspoons baking powder
- 2 egg whites, stiffly beaten
Method
- 1 In a mixing bowl, cream together the sugar and egg yolks until well combined.
- 2 Add the shortening, flour, and baking powder to the mixture, mixing until just combined.
- 3 Gently fold in the stiffly beaten egg whites until fully incorporated.
- 4 Drop spoonfuls of batter onto a well-greased and floured baking sheet, spacing them 3 inches apart.
- 5 Bake in a moderate oven (350°F) until golden brown.
