Sugar Drop Cakes

Ingredients

• 3/4 cup sugar
• 2 egg yolks
• 4 tablespoons shortening
• 1 1/2 cups flour
• 3 teaspoons baking powder
• 2 egg whites, stiffly beaten

Method

1. 1 In a mixing bowl, cream together the sugar and egg yolks until well combined.
2. 2 Add the shortening, flour, and baking powder to the mixture, mixing until just combined.
3. 3 Gently fold in the stiffly beaten egg whites until fully incorporated.
4. 4 Drop spoonfuls of batter onto a well-greased and floured baking sheet, spacing them 3 inches apart.
5. 5 Bake in a moderate oven (350°F) until golden brown.
