Sugar-Coated Norwegian Butter Cookies
Ingredients
- 1/2 lb butter
- 2 hard-boiled egg yolks
- 2 raw egg yolks
- 4 oz powdered sugar
- 1 lb flour
- 1/4 cup brandy
- 1 egg white
- granulated sugar for coating
Method
- 1 Wash and beat butter to a cream. Mash hard-boiled yolks and stir into raw yolks.
- 2 Stir powdered sugar into the egg mixture, then combine with the butter.
- 3 Mix in flour and brandy until well combined. Roll dough and shape into small cakes.
- 4 Dip cakes in beaten egg white, roll in granulated sugar, and place on greased tins.
- 5 Bake in a slow oven (300°F) for 15-20 minutes until delicately browned.
