Sugar-Coated Norwegian Butter Cookies

  • 1/2 lb butter
  • 2 hard-boiled egg yolks
  • 2 raw egg yolks
  • 4 oz powdered sugar
  • 1 lb flour
  • 1/4 cup brandy
  • 1 egg white
  • granulated sugar for coating

Method

  1. 1 Wash and beat butter to a cream. Mash hard-boiled yolks and stir into raw yolks.
  2. 2 Stir powdered sugar into the egg mixture, then combine with the butter.
  3. 3 Mix in flour and brandy until well combined. Roll dough and shape into small cakes.
  4. 4 Dip cakes in beaten egg white, roll in granulated sugar, and place on greased tins.
  5. 5 Bake in a slow oven (300°F) for 15-20 minutes until delicately browned.
