  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons shortening
  • 2 large eggs
  • 1/3 to ½ cup milk

Method

  1. 1 Sift together flour, baking powder, salt, and sugar in a large bowl.
  2. 2 Add shortening and rub in lightly until the mixture resembles coarse crumbs.
  3. 3 Beat eggs until light, then add milk. Pour this mixture slowly into the dry ingredients to form a soft dough.
  4. 4 Roll out the dough on a floured board to ½ inch thick. Cut into 3-inch squares and fold each corner to the center to make triangles.
  5. 5 Brush scones with milk and sprinkle with sugar. Bake in a hot oven (425°F) for about 25 minutes.
