Stuffed Veal Roll With Ham And Cheese
Ingredients
- 1 lb veal, sliced into 7-8 cutlets
- 1 lb tender veal, chopped
- 1-2 slices ham, chopped
- 2 oz veal marrow bone
- ½ cup grated cheese
- 1 egg
- Pinch of pepper
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 2 oz corned beef, chopped
- 1 tbsp butter
- 1 cup tomato sauce
- Water as needed
- Cooking twine
Method
- 1 Beat veal cutlets flat with a knife blade. Chop tender veal, ham, marrow, and cheese into a fine paste.
- 2 Mix the paste with egg and pepper. Spread mixture onto cutlets, roll up, and tie securely with kitchen twine.
- 3 Sauté chopped onion, celery, carrot, and corned beef in butter. Add tied cutlets and brown them.
- 4 Pour in tomato sauce and enough water to partially submerge. Simmer until cooked through. Remove twine before serving.
