Stuffed Veal Roll With Bacon
Ingredients
- veal cutlets
- breadcrumbs
- chopped salt pork or bacon
- sliced carrot
- chopped onion
- 1 cup stock
Method
- 1 Cut veal cutlets into pieces and flatten with a potato masher.
- 2 Mix seasoned breadcrumbs with chopped salt pork or bacon to make a stuffing.
- 3 Stuff the veal, roll up, and tie into shape with strings.
- 4 Brown in fat with a sliced carrot and chopped onion.
- 5 Add one cup of stock, cover, and cook slowly for twenty minutes.
