Ingredients

  • veal cutlets
  • breadcrumbs
  • chopped salt pork or bacon
  • sliced carrot
  • chopped onion
  • 1 cup stock

Method

  1. 1 Cut veal cutlets into pieces and flatten with a potato masher.
  2. 2 Mix seasoned breadcrumbs with chopped salt pork or bacon to make a stuffing.
  3. 3 Stuff the veal, roll up, and tie into shape with strings.
  4. 4 Brown in fat with a sliced carrot and chopped onion.
  5. 5 Add one cup of stock, cover, and cook slowly for twenty minutes.
