Stuffed Tomatoes With Peppers And Cracker Crumbs
Ingredients
- 4 medium tomatoes
- 1 small onion, chopped
- 2 green peppers, chopped
- Tomato pulp from insides
- Cracker crumbs
- Soup stock
- Butter
Method
- 1 Hollow out the tomatoes by removing part of the insides and set aside.
- 2 Chop the onion, green peppers, and reserved tomato pulp.
- 3 Mix the chopped vegetables with cracker crumbs and soup stock to moisten.
- 4 Fill the tomatoes with the mixture and place a small piece of butter on top of each.
- 5 Bake for 10 to 15 minutes until heated through.
