  • 4 large smooth tomatoes
  • 1 cucumber, diced small
  • 1 small onion, grated
  • French dressing
  • Mayonnaise
  • Lettuce leaves

Method

  1. 1 Scald, peel, and cool the tomatoes. Cut off the blossom end and scoop out the pulp with a spoon.
  2. 2 Drain the tomato pulp and mix it with the diced cucumber and grated onion.
  3. 3 Toss the mixture with French dressing to season.
  4. 4 Fill the hollowed tomato shells with the cucumber mixture.
  5. 5 Top each tomato with a spoonful of mayonnaise and serve on lettuce leaves.
