Stuffed Tomatoes With Cucumber And Onion
Ingredients
- 4 large smooth tomatoes
- 1 cucumber, diced small
- 1 small onion, grated
- French dressing
- Mayonnaise
- Lettuce leaves
Method
- 1 Scald, peel, and cool the tomatoes. Cut off the blossom end and scoop out the pulp with a spoon.
- 2 Drain the tomato pulp and mix it with the diced cucumber and grated onion.
- 3 Toss the mixture with French dressing to season.
- 4 Fill the hollowed tomato shells with the cucumber mixture.
- 5 Top each tomato with a spoonful of mayonnaise and serve on lettuce leaves.
