Stuffed Tomatoes With Chicken And Bread Crumbs
Ingredients
- 6 tomatoes
- 3 oz cooked white meat
- 1 small shallot, chopped
- 1 tsp chopped parsley
- Salt and pepper to taste
- 2 tbsp bread crumbs
- 1 egg
- Butter for topping
Method
- 1 Hollow out the centers of the tomatoes.
- 2 Dice the cooked meat finely and mix with bread crumbs, chopped shallot, parsley, egg, salt, and pepper.
- 3 Fill the tomatoes with the meat mixture and place a small piece of butter on top of each.
- 4 Bake in a moderate oven (350°F) for 15 minutes.
