Stuffed Sweet Potato Skins
Ingredients
- 4 large sweet potatoes
- 4 eggs
- Heavy cream
- Salt and pepper to taste
- Mustard (optional)
- Butter
Method
- 1 Bake sweet potatoes until tender. Cut in half lengthwise, trim ends to stand, and scoop out flesh, leaving skins intact.
- 2 Boil eggs hard. Mash yolks into a paste with cream, salt, pepper, and mustard. Mash potato flesh and mix with yolk paste.
- 3 Fill potato skins with mixture. Top each with a piece of butter and bake until well browned. Serve immediately.
