Stuffed Sweet Potato Skins

Ingredients

  • 4 large sweet potatoes
  • 4 eggs
  • Heavy cream
  • Salt and pepper to taste
  • Mustard (optional)
  • Butter

Method

  1. 1 Bake sweet potatoes until tender. Cut in half lengthwise, trim ends to stand, and scoop out flesh, leaving skins intact.
  2. 2 Boil eggs hard. Mash yolks into a paste with cream, salt, pepper, and mustard. Mash potato flesh and mix with yolk paste.
  3. 3 Fill potato skins with mixture. Top each with a piece of butter and bake until well browned. Serve immediately.
