Stuffed Potatoes With Mixed Vegetables
Ingredients
- large potatoes
- white stock
- salt
- butter
- cooked peas
- cooked asparagus
- cooked Brussels sprouts
- cooked beans
- cream
Method
- 1 Cut potatoes in half and scoop out the center to form a cavity.
- 2 Blanch potatoes in salted water, then cook for 15 minutes in white stock with butter.
- 3 Fill the cavities with a mixture of cooked peas, asparagus, sprouts, and beans.
- 4 Add a little cream to each potato before serving.
