  • large potatoes
  • white stock
  • salt
  • butter
  • cooked peas
  • cooked asparagus
  • cooked Brussels sprouts
  • cooked beans
  • cream

Method

  1. 1 Cut potatoes in half and scoop out the center to form a cavity.
  2. 2 Blanch potatoes in salted water, then cook for 15 minutes in white stock with butter.
  3. 3 Fill the cavities with a mixture of cooked peas, asparagus, sprouts, and beans.
  4. 4 Add a little cream to each potato before serving.
