  • 8 medium potatoes
  • 1 cup diced cooked turkey, chicken, beef, or pork
  • 1/2 cup coarsely chopped broccoli
  • 1/2 cup chopped onion
  • 3/4 cup thinly sliced carrots
  • 3/4 cup hot water
  • 1 tablespoon non-fat milk
  • 1/4 teaspoon flour
  • 1/2 teaspoon black pepper
  • shredded low-fat cheese

Method

  1. 1 Scrub potatoes, remove bad spots, and cut each in half. Do not peel.
  2. 2 Boil potatoes in a covered saucepan with just enough water to cover until fork-tender, about 15-20 minutes. Drain and set aside.
  3. 3 In a skillet, combine meat, broccoli, onion, carrots, and hot water. Boil until vegetables are tender, about 5 minutes.
  4. 4 Mix milk, flour, and pepper in a jar with a tight lid. Shake well, then stir into the meat mixture until blended.
