Stuffed Potatoes With Meat And Vegetables
Ingredients
- 8 medium potatoes
- 1 cup diced cooked turkey, chicken, beef, or pork
- 1/2 cup coarsely chopped broccoli
- 1/2 cup chopped onion
- 3/4 cup thinly sliced carrots
- 3/4 cup hot water
- 1 tablespoon non-fat milk
- 1/4 teaspoon flour
- 1/2 teaspoon black pepper
- shredded low-fat cheese
Method
- 1 Scrub potatoes, remove bad spots, and cut each in half. Do not peel.
- 2 Boil potatoes in a covered saucepan with just enough water to cover until fork-tender, about 15-20 minutes. Drain and set aside.
- 3 In a skillet, combine meat, broccoli, onion, carrots, and hot water. Boil until vegetables are tender, about 5 minutes.
- 4 Mix milk, flour, and pepper in a jar with a tight lid. Shake well, then stir into the meat mixture until blended.
- 5 Stir in cheese and cook over low heat for 5 minutes, stirring frequently, until the sauce thickens.
- 6 Mash the middle of each potato half slightly. Spoon the meat mixture over the potatoes and serve.
