Stuffed Potato Skins With Fried Onion

Ingredients

  • 6 large boiled potatoes
  • 1 large English onion
  • 1/2 oz butter
  • 1 egg, well beaten
  • Salt and pepper to taste

Method

  1. 1 Halve the potatoes and scoop out most of the soft flesh, leaving the skins intact.
  2. 2 Mash the scooped potato flesh with a fork.
  3. 3 Mince the onion finely and fry it in half the butter until golden brown.
  4. 4 Combine the mashed potatoes, fried onion, beaten egg, salt, and pepper.
  5. 5 Fill the potato skins with the mixture and tie the halves together with kitchen twine.
  6. 6 Brush the stuffed potatoes with the remaining butter and bake in a moderate oven (350°F) until heated through.
