Stuffed Potato Skins With Fried Onion
Ingredients
- 6 large boiled potatoes
- 1 large English onion
- 1/2 oz butter
- 1 egg, well beaten
- Salt and pepper to taste
Method
- 1 Halve the potatoes and scoop out most of the soft flesh, leaving the skins intact.
- 2 Mash the scooped potato flesh with a fork.
- 3 Mince the onion finely and fry it in half the butter until golden brown.
- 4 Combine the mashed potatoes, fried onion, beaten egg, salt, and pepper.
- 5 Fill the potato skins with the mixture and tie the halves together with kitchen twine.
- 6 Brush the stuffed potatoes with the remaining butter and bake in a moderate oven (350°F) until heated through.
