Stuffed Cucumbers With Rice And Tomatoes
Ingredients
- 3 cucumbers
- 2 tbsp butter
- 1 small onion, chopped
- 1 tsp salt
- Dash of pepper
- 1 1/2 cups steamed rice
- 1 cup stewed tomatoes
- Breadcrumbs
Method
- 1 Wash, peel, and halve cucumbers lengthwise. Hollow out the centers to create boat shapes.
- 2 Melt butter in a frying pan. Add chopped onion, salt, and pepper; heat for a few minutes.
- 3 Add rice, stewed tomatoes, and enough breadcrumbs to absorb excess moisture. Mix well.
- 4 Fill cucumber boats with the mixture. Place in a baking pan and add a small amount of hot water.
- 5 Bake until cucumbers are soft enough to be pierced easily with a fork. Serve hot.
