Stuffed Cucumbers With Rice And Tomatoes

Ingredients

  • 3 cucumbers
  • 2 tbsp butter
  • 1 small onion, chopped
  • 1 tsp salt
  • Dash of pepper
  • 1 1/2 cups steamed rice
  • 1 cup stewed tomatoes
  • Breadcrumbs

Method

  1. 1 Wash, peel, and halve cucumbers lengthwise. Hollow out the centers to create boat shapes.
  2. 2 Melt butter in a frying pan. Add chopped onion, salt, and pepper; heat for a few minutes.
  3. 3 Add rice, stewed tomatoes, and enough breadcrumbs to absorb excess moisture. Mix well.
  4. 4 Fill cucumber boats with the mixture. Place in a baking pan and add a small amount of hot water.
  5. 5 Bake until cucumbers are soft enough to be pierced easily with a fork. Serve hot.
