Stuffed Cucumber Salad With Tomato And Celery
Ingredients
- 1 short cucumber
- 1 peeled and seeded tomato
- 1 slice new onion
- 1 stalk celery
- 1 sprig parsley
- mayonnaise or boiled dressing
- cress or lettuce for serving
Method
- 1 Pare the cucumber and cut it lengthwise in two parts. Remove the seeds and chill in ice water for an hour.
- 2 Chop the tomato, onion, celery, and parsley together. Mix with mayonnaise or boiled dressing to create the filling.
- 3 Drain the cucumber halves well and fill them with the vegetable mixture. Serve on a bed of cress or lettuce.
