Stuffed Crab Shells With Mushroom Filling
Ingredients
- 6 crabs, meat removed
- 6 mushrooms, diced
- 1 cup milk or cream
- 1 slice onion, chopped fine
- 1 tablespoon butter
- 1 tablespoon flour
- 1 teaspoon salt
- ½ teaspoon paprika or dash of cayenne
- ½ teaspoon lemon juice
- 4 egg yolks, hard-boiled and mashed
Method
- 1 Melt butter in a saucepan, add chopped onion, and cook until soft but not brown.
- 2 Stir in flour, cook briefly, then slowly add milk or cream, stirring until thickened.
- 3 Remove from heat and stir in mashed egg yolks, salt, paprika, and lemon juice.
- 4 Fold in crab meat and diced mushrooms. The mixture should be thick, not soft.
- 5 Fill crab shells with the mixture and bake until golden and heated through.
