Stuffed Crab Shells With Mushroom Filling

Ingredients

  • 6 crabs, meat removed
  • 6 mushrooms, diced
  • 1 cup milk or cream
  • 1 slice onion, chopped fine
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 teaspoon salt
  • ½ teaspoon paprika or dash of cayenne
  • ½ teaspoon lemon juice
  • 4 egg yolks, hard-boiled and mashed

Method

  1. 1 Melt butter in a saucepan, add chopped onion, and cook until soft but not brown.
  2. 2 Stir in flour, cook briefly, then slowly add milk or cream, stirring until thickened.
  3. 3 Remove from heat and stir in mashed egg yolks, salt, paprika, and lemon juice.
  4. 4 Fold in crab meat and diced mushrooms. The mixture should be thick, not soft.
  5. 5 Fill crab shells with the mixture and bake until golden and heated through.
