Stuffed Chicken With Chestnuts And Sausage
Ingredients
- 1 middle-sized chicken
- 2 sausages
- Chicken liver and giblets
- 8-10 roasted chestnuts
- Mushrooms, chopped
- 1 egg
- Nutmeg, to taste
- Salt and pepper
- Broth
- Breadcrumbs
Method
- 1 Parboil sausages and giblets with a little broth. Season lightly with salt and pepper.
- 2 Remove meats. Add breadcrumbs to the remaining gravy to create a thick paste.
- 3 Peel sausages, chop giblets, and grind them with chestnuts, egg, and the paste.
- 4 Stuff the chicken with the mixture and bake until cooked through.
