Stuffed Chicken Drumsticks With Liver And Pork
Ingredients
- Chicken or turkey legs (drumsticks)
- Chicken or veal, chopped very fine
- Liver
- Larding pork, in a little strip
- Salt
- Pepper
- Parsley, chopped
- 1 egg
- Bread crumbs
- Butter (optional for sautéing)
- Mustard (optional for deviled variation)
- Red pepper (optional for deviled variation)
Method
- 1 Remove tendons and bones from drumsticks, leaving about 1.5 inches of bone at the small end. Remove remaining sinews.
- 2 Mix chopped chicken or veal, liver, larding pork, salt, pepper, parsley, and 1 egg to make forcemeat. Stuff into legs and sew skin closed.
- 3 Simmer stuffed legs in boiling water for 1 hour until tender. Remove, press into shape, and let cool completely.
- 4 Remove stitches. Dredge with salt and pepper, roll in beaten egg and bread crumbs.
- 5 Fry in hot fat until browned, broil (4 mins for chicken, 6 for turkey), or sauté in butter. Serve with desired sauce.
