Stuffed Cabbage With Sausage Meat
Ingredients
- 1 large head of cabbage
- 1 lb pork (fat and lean), ground
- 1 onion, finely chopped
- Salt and pepper to taste
- A dash of mace
- 1 tbsp butter
- 1 tsp flour
- Stout twine
Method
- 1 Mix ground pork, chopped onion, salt, pepper, and mace to make sausage meat.
- 2 Cut cabbage in half, scoop out the core, and pack the sausage mixture inside. Tie securely with twine.
- 3 Boil the stuffed cabbage in salted water for 1.5 hours. Drain, reserving up to 1 cup of cooking liquid.
- 4 Melt butter in a pan, stir in flour to make a roux, then whisk in the reserved cabbage liquid.
- 5 Pour the sauce over the cabbage and serve hot.
