Stuffed Cabbage With Sausage Meat

Ingredients

  • 1 large head of cabbage
  • 1 lb pork (fat and lean), ground
  • 1 onion, finely chopped
  • Salt and pepper to taste
  • A dash of mace
  • 1 tbsp butter
  • 1 tsp flour
  • Stout twine

Method

  1. 1 Mix ground pork, chopped onion, salt, pepper, and mace to make sausage meat.
  2. 2 Cut cabbage in half, scoop out the core, and pack the sausage mixture inside. Tie securely with twine.
  3. 3 Boil the stuffed cabbage in salted water for 1.5 hours. Drain, reserving up to 1 cup of cooking liquid.
  4. 4 Melt butter in a pan, stir in flour to make a roux, then whisk in the reserved cabbage liquid.
  5. 5 Pour the sauce over the cabbage and serve hot.
