Stuffed Beef Rolls With Sage Stuffing

Ingredients

  • 1 lb rump or beefsteak, cut thin
  • Veal or sage-and-onion stuffing
  • ½ oz flour
  • 1 cup boiling water

Method

  1. 1 Lay the stuffing on the steak and roll it around the meat.
  2. 2 Tie the rolled steak securely with kitchen twine.
  3. 3 Place the steak in a pie dish and pour boiling water over it.
  4. 4 Cover with an inverted pie dish and place in a moderate oven (350°F) for 2-3 hours until tender.
  5. 5 Transfer the steak to a hot serving dish.
  6. 6 Thicken the pan juices with the flour to make gravy and pour over the steak.
