Stuffed Artichokes With Veal And Ham
Ingredients
- 6 artichokes
- ¼ lb lean veal, chopped
- 2 slices ham, chopped
- 1 small onion, chopped
- Parsley leaves, chopped
- 1 pinch softened dried mushrooms
- 1 small crumb bread, rolled and sifted
- 1 pinch grated cheese
- Oil for browning
Method
- 1 Prepare the stuffing by combining the chopped veal, ham, onion, parsley, mushrooms, bread crumbs, and cheese in a bowl.
- 2 Remove the interior leaves and choke from the artichokes to create space for the stuffing.
- 3 Fill the artichoke cavities generously with the meat mixture.
- 4 Brown the stuffed artichokes in oil in a skillet.
- 5 Add a little water, cover with a moistened cloth, and place the lid on the skillet to steam until tender.
