Strawberry Red Currant Jam
Ingredients
- 1 lb strawberries
- 1 lb powdered sugar
- ½ lb strawberries (for juice)
- ½ cup red currant juice
- ½ lb powdered sugar
Method
- 1 Squeeze the juice from the second half pound of strawberries through a cloth, ensuring no seeds pass through.
- 2 Combine the whole strawberries, strained juice, and first pound of sugar in a pot. Boil over high heat, skimming frequently.
- 3 Remove from heat, place in a bowl, and cover tightly with wax paper to cool.
- 4 When ready to finish, add the red currant juice and remaining half pound of sugar to the cooled mixture.
- 5 Boil together for 10-12 minutes over high heat, skimming very well until set.
