Strawberry Red Currant Jam

Ingredients

  • 1 lb strawberries
  • 1 lb powdered sugar
  • ½ lb strawberries (for juice)
  • ½ cup red currant juice
  • ½ lb powdered sugar

Method

  1. 1 Squeeze the juice from the second half pound of strawberries through a cloth, ensuring no seeds pass through.
  2. 2 Combine the whole strawberries, strained juice, and first pound of sugar in a pot. Boil over high heat, skimming frequently.
  3. 3 Remove from heat, place in a bowl, and cover tightly with wax paper to cool.
  4. 4 When ready to finish, add the red currant juice and remaining half pound of sugar to the cooled mixture.
  5. 5 Boil together for 10-12 minutes over high heat, skimming very well until set.
