Strawberry Custard With Whipped Egg Whites
Ingredients
- 1 cup sugar
- 1 quart milk
- 5 egg yolks
- 1 egg white
- 1 teaspoon vanilla
- 1 pint strawberries
- 2 tablespoons sugar
- 4 egg whites
Method
- 1 Bring the milk to a boil in a saucepan.
- 2 Whisk together the 5 egg yolks, 1 egg white, 1 cup sugar, and vanilla.
- 3 Slowly pour the hot milk into the egg mixture while whisking constantly to temper.
- 4 Return the mixture to the pan and cook gently, stirring, until it thickens slightly. Let cool completely.
- 5 Crush and strain the strawberries to extract the juice, mixing in the 2 tablespoons of sugar.
- 6 Beat the 4 egg whites until stiff peaks form.
- 7 Spoon the cooled custard into glasses, filling them halfway.
- 8 Top with the strawberry juice and gently fold in the beaten egg whites.
