  • 1 cup sugar
  • 1 quart milk
  • 5 egg yolks
  • 1 egg white
  • 1 teaspoon vanilla
  • 1 pint strawberries
  • 2 tablespoons sugar
  • 4 egg whites

Method

  1. 1 Bring the milk to a boil in a saucepan.
  2. 2 Whisk together the 5 egg yolks, 1 egg white, 1 cup sugar, and vanilla.
  3. 3 Slowly pour the hot milk into the egg mixture while whisking constantly to temper.
  4. 4 Return the mixture to the pan and cook gently, stirring, until it thickens slightly. Let cool completely.
  5. 5 Crush and strain the strawberries to extract the juice, mixing in the 2 tablespoons of sugar.
  6. 6 Beat the 4 egg whites until stiff peaks form.
  7. 7 Spoon the cooled custard into glasses, filling them halfway.
  8. 8 Top with the strawberry juice and gently fold in the beaten egg whites.
