Strawberry Cream Layer Cake
Ingredients
- 1 cup sugar
- 4 tablespoons shortening
- 1 egg
- 2 cups flour
- 3 teaspoons baking powder
- 1/8 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- ½ pint heavy cream
- 1 quart strawberries
Method
- 1 Cream sugar and shortening together. Add beaten egg and mix well.
- 2 Sift flour, baking powder, and salt together. Alternately add dry ingredients and milk to the creamed mixture, mixing well after each addition. Stir in vanilla.
- 3 Pour batter into a shallow greased pan. Bake in a moderate oven (350°F) for 20 to 30 minutes.
- 4 Let cake cool completely. Split horizontally into two layers.
- 5 Whip the heavy cream. Spread whipped cream and crushed sweetened strawberries between the layers.
- 6 Cover the top with remaining whipped cream and garnish with whole strawberries.
