Strawberry Cream Layer Cake

Ingredients

  • 1 cup sugar
  • 4 tablespoons shortening
  • 1 egg
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • ½ pint heavy cream
  • 1 quart strawberries

Method

  1. 1 Cream sugar and shortening together. Add beaten egg and mix well.
  2. 2 Sift flour, baking powder, and salt together. Alternately add dry ingredients and milk to the creamed mixture, mixing well after each addition. Stir in vanilla.
  3. 3 Pour batter into a shallow greased pan. Bake in a moderate oven (350°F) for 20 to 30 minutes.
  4. 4 Let cake cool completely. Split horizontally into two layers.
  5. 5 Whip the heavy cream. Spread whipped cream and crushed sweetened strawberries between the layers.
  6. 6 Cover the top with remaining whipped cream and garnish with whole strawberries.
