Strawberry Balsamic White Bean Salad
Ingredients
- 1 1/2 cups strawberries
- 1 1/2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1/4 cup apple juice
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 cups shelled edamame
- 1 can (15 ounce) low sodium white beans, drained and rinsed
- 1/2 cup red onion, chopped
- 2 tablespoons chopped fresh basil
- 1/2 cup crumbled feta cheese
- 6 cups baby spinach
Method
- 1 Cook edamame according to package directions. Rinse under cool water and drain.
- 2 In a small bowl, whisk together strawberries, olive oil, balsamic vinegar, apple juice, salt, and pepper to make the vinaigrette.
- 3 In a medium bowl, toss edamame, white beans, red onion, and basil.
- 4 Serve by nesting the bean mixture atop baby spinach on individual plates.
- 5 Top with feta cheese and drizzle with the strawberry vinaigrette.
