Strawberry And Currant Jelly

Ingredients

  • 3/4 lb strawberries
  • 1 1/4 lb sugar
  • 1/2 pint red currant juice
  • 1/2 pint white currant juice
  • Water for boiling

Method

  1. 1 Boil strawberries in water, then add sugar dissolved in the strawberry liquor.
  2. 2 Boil quickly, skim clear, and cool in a bowl without touching to prevent bruising.
  3. 3 When currants are ripe, boil the strawberry syrup, skim, and cool slightly.
  4. 4 Strain syrup through a sieve, then add red and white currant juices.
  5. 5 Boil the combined syrup for 10 minutes until it jellies on a spoon.
  6. 6 Add strawberries to the hot jelly, simmer gently (do not boil), and pot carefully.
