Strawberry And Currant Jelly
Ingredients
- 3/4 lb strawberries
- 1 1/4 lb sugar
- 1/2 pint red currant juice
- 1/2 pint white currant juice
- Water for boiling
Method
- 1 Boil strawberries in water, then add sugar dissolved in the strawberry liquor.
- 2 Boil quickly, skim clear, and cool in a bowl without touching to prevent bruising.
- 3 When currants are ripe, boil the strawberry syrup, skim, and cool slightly.
- 4 Strain syrup through a sieve, then add red and white currant juices.
- 5 Boil the combined syrup for 10 minutes until it jellies on a spoon.
- 6 Add strawberries to the hot jelly, simmer gently (do not boil), and pot carefully.
