Strained Tomato Soup With Onion And Parsley
Ingredients
- 1 quart tomatoes
- 1 pint water
- 1 tablespoon sugar
- 1 teaspoon salt
- 6 cloves
- Black pepper to taste
- 1 tablespoon butter
- 1 chopped onion
- Fresh parsley, chopped
- 1 tablespoon flour
- Water for mixing
Method
- 1 Combine tomatoes, water, sugar, salt, cloves, and pepper in a pot. Bring to a boil and cook for 10 minutes.
- 2 In a separate saucepan, melt butter over medium heat. Add chopped onion and parsley, frying for about 5 minutes until softened.
- 3 Mix flour with a small amount of water to create a smooth paste. Add this to the onion mixture and boil for 10 minutes.
- 4 Strain the tomato mixture into the butter-flour mixture. Stir well and serve hot.
