Strained Tomato Soup With Onion And Parsley

  • 1 quart tomatoes
  • 1 pint water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 6 cloves
  • Black pepper to taste
  • 1 tablespoon butter
  • 1 chopped onion
  • Fresh parsley, chopped
  • 1 tablespoon flour
  • Water for mixing

Method

  1. 1 Combine tomatoes, water, sugar, salt, cloves, and pepper in a pot. Bring to a boil and cook for 10 minutes.
  2. 2 In a separate saucepan, melt butter over medium heat. Add chopped onion and parsley, frying for about 5 minutes until softened.
  3. 3 Mix flour with a small amount of water to create a smooth paste. Add this to the onion mixture and boil for 10 minutes.
  4. 4 Strain the tomato mixture into the butter-flour mixture. Stir well and serve hot.
