Strained Tomato Rice Soup

Ingredients

  • 1 1/2 lbs tomatoes (or 1 can)
  • 1 oz butter
  • 3 pints water (2 pints if using canned tomatoes)
  • 2 oz rice
  • 1 large onion
  • 1 teaspoon mixed herbs
  • Salt and pepper to taste

Method

  1. 1 Slice tomatoes, chop onion, and cook with water for 20 minutes.
  2. 2 Strain the mixture and return the liquid to the saucepan.
  3. 3 Add rice, herbs, and seasoning; cook gently until rice is tender.
