Strained Tomato Rice Soup
Ingredients
- 1 1/2 lbs tomatoes (or 1 can)
- 1 oz butter
- 3 pints water (2 pints if using canned tomatoes)
- 2 oz rice
- 1 large onion
- 1 teaspoon mixed herbs
- Salt and pepper to taste
Method
- 1 Slice tomatoes, chop onion, and cook with water for 20 minutes.
- 2 Strain the mixture and return the liquid to the saucepan.
- 3 Add rice, herbs, and seasoning; cook gently until rice is tender.
