Strained Tomato And Milk Soup

Ingredients

  • 1 tbsp butter
  • ½ onion, chopped fine
  • 1 pint canned tomatoes
  • 1 tbsp flour
  • 1 tbsp butter
  • 1 pint boiling milk
  • Salt and pepper to taste
  • 1 pinch sugar
  • Croutons for serving

Method

  1. 1 Melt 1 tbsp butter in a saucepan over medium heat. Add chopped onion and stew gently for a few minutes until softened.
  2. 2 Add canned tomatoes and cook for 30 minutes.
  3. 3 Mix flour and 1 tbsp butter into a smooth paste. Stir this into the tomato mixture.
  4. 4 Pour the mixture through a sieve into a bowl, using boiling milk to help push it through. Return the strained soup to the pan.
  5. 5 Season with salt, pepper, and a pinch of sugar. Heat gently without boiling. Serve immediately with croutons.
