Strained Tomato And Milk Soup
Ingredients
- 1 tbsp butter
- ½ onion, chopped fine
- 1 pint canned tomatoes
- 1 tbsp flour
- 1 tbsp butter
- 1 pint boiling milk
- Salt and pepper to taste
- 1 pinch sugar
- Croutons for serving
Method
- 1 Melt 1 tbsp butter in a saucepan over medium heat. Add chopped onion and stew gently for a few minutes until softened.
- 2 Add canned tomatoes and cook for 30 minutes.
- 3 Mix flour and 1 tbsp butter into a smooth paste. Stir this into the tomato mixture.
- 4 Pour the mixture through a sieve into a bowl, using boiling milk to help push it through. Return the strained soup to the pan.
- 5 Season with salt, pepper, and a pinch of sugar. Heat gently without boiling. Serve immediately with croutons.
