Strained Tomato And Herb Sauce
Ingredients
- 2 tablespoons butter
- 1 tablespoon flour
- 1 carrot, chopped
- 1 onion, chopped
- ½ can tomatoes
- Parsley
- 1 bay leaf
- 3 cloves
- ½ teaspoon salt
- ¼ teaspoon pepper
Method
- 1 Melt 1 tablespoon butter in a saucepan. Add chopped onion and carrot, cooking until slightly browned.
- 2 Stir in flour and cook for 5 minutes, stirring constantly.
- 3 Add tomatoes, cloves, bay leaf, salt, and pepper. Cook slowly for 30 minutes until reduced.
- 4 Remove from heat. Whisk in remaining tablespoon of butter, adding small pieces at a time.
- 5 Strain the sauce. Adjust salt and pepper to taste before serving.
