Strained Tomato And Herb Sauce

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 carrot, chopped
  • 1 onion, chopped
  • ½ can tomatoes
  • Parsley
  • 1 bay leaf
  • 3 cloves
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Method

  1. 1 Melt 1 tablespoon butter in a saucepan. Add chopped onion and carrot, cooking until slightly browned.
  2. 2 Stir in flour and cook for 5 minutes, stirring constantly.
  3. 3 Add tomatoes, cloves, bay leaf, salt, and pepper. Cook slowly for 30 minutes until reduced.
  4. 4 Remove from heat. Whisk in remaining tablespoon of butter, adding small pieces at a time.
  5. 5 Strain the sauce. Adjust salt and pepper to taste before serving.
