Strained Root Vegetable And Barley Soup
Ingredients
- 1 potato
- 2 onions
- 2 carrots
- 2 turnips
- 2 stalks celery
- 3 pints water
- 3 or 4 thick slices beetroot
- 1 dozen small sprigs watercress
- 1 dozen small sprigs parsley
- 1 ½ teaspoons salt
- 2 tablespoons pearl barley
- 1 ounce butter
Method
- 1 Melt butter in a saucepan and fry sliced onions for 5 minutes.
- 2 Add all remaining ingredients and boil for 1 hour 30 minutes.
- 3 Strain the soup before serving.
