Strained Root Vegetable And Barley Soup

Ingredients

  • 1 potato
  • 2 onions
  • 2 carrots
  • 2 turnips
  • 2 stalks celery
  • 3 pints water
  • 3 or 4 thick slices beetroot
  • 1 dozen small sprigs watercress
  • 1 dozen small sprigs parsley
  • 1 ½ teaspoons salt
  • 2 tablespoons pearl barley
  • 1 ounce butter

Method

  1. 1 Melt butter in a saucepan and fry sliced onions for 5 minutes.
  2. 2 Add all remaining ingredients and boil for 1 hour 30 minutes.
  3. 3 Strain the soup before serving.
