Strained Mushroom Ketchup Pan Sauce With Port
Ingredients
- 1 lb steak, chops, or cutlets
- 1 tbsp fat from pan or 1 oz butter
- 1 tbsp flour
- 1 cup boiling water
- 1 tbsp mushroom or walnut ketchup
- 1 sliced onion or minced shallot (optional)
- 1 tbsp port wine (optional)
Method
- 1 Remove cooked meat from pan. Leave 1 tbsp fat in pan or add 1 oz butter.
- 2 Add 1 tbsp flour to fat and rub together over heat until lightly browned.
- 3 Stir in 1 cup boiling water and 1 tbsp mushroom or walnut ketchup.
- 4 Boil for a few minutes until thickened, then strain over the meat.
