Strained Green Pea And Root Vegetable Soup

Ingredients

  • 2 pints soaked green peas
  • 1 large onion
  • 1 large carrot
  • 1 large turnip
  • 2 quarts water
  • 1 ounce butter
  • 1 teaspoon salt
  • 1 dozen peppercorns

Method

  1. 1 Dissolve butter in a large saucepan.
  2. 2 Add soaked peas, sliced onion, carrot, turnip, and peppercorns.
  3. 3 Boil gently for three hours.
  4. 4 Add salt and rub the mixture through a wire sieve with a wooden spoon.
  5. 5 Serve with sippets of toast.
