Strained Green Pea And Root Vegetable Soup
Ingredients
- 2 pints soaked green peas
- 1 large onion
- 1 large carrot
- 1 large turnip
- 2 quarts water
- 1 ounce butter
- 1 teaspoon salt
- 1 dozen peppercorns
Method
- 1 Dissolve butter in a large saucepan.
- 2 Add soaked peas, sliced onion, carrot, turnip, and peppercorns.
- 3 Boil gently for three hours.
- 4 Add salt and rub the mixture through a wire sieve with a wooden spoon.
- 5 Serve with sippets of toast.
