Strained Creamy Tomato Soup

Ingredients

  • 1 can (28 oz) whole peeled tomatoes or equivalent fresh tomatoes
  • 1 small onion, chopped
  • 1 tablespoon salt
  • Dash of paprika
  • 2½ tablespoons sugar
  • 1 tablespoon butter
  • 2½ tablespoons all-purpose flour
  • 2 cups hot milk
  • 1 pint water
  • 1 cup heavy cream (optional)

Method

  1. 1 Combine tomatoes and water in a large pot. Bring to a boil and simmer for at least 30 minutes.
  2. 2 In a separate pan, fry the chopped onion in butter until softened. Add the onion, sugar, salt, and paprika to the tomato mixture.
  3. 3 Blend the flour with a little cold water to form a smooth paste. Stir this into the soup to thicken it.
  4. 4 Strain the soup through a fine-mesh sieve back into the pot. Discard solids.
  5. 5 Heat the milk until very hot but not boiling. Slowly stir the hot milk into the strained soup.
  6. 6 Serve immediately. Do not return to heat after adding milk. Substitute cream for milk for a richer flavor.
