Strained Creamy Tomato Soup
Ingredients
- 1 can (28 oz) whole peeled tomatoes or equivalent fresh tomatoes
- 1 small onion, chopped
- 1 tablespoon salt
- Dash of paprika
- 2½ tablespoons sugar
- 1 tablespoon butter
- 2½ tablespoons all-purpose flour
- 2 cups hot milk
- 1 pint water
- 1 cup heavy cream (optional)
Method
- 1 Combine tomatoes and water in a large pot. Bring to a boil and simmer for at least 30 minutes.
- 2 In a separate pan, fry the chopped onion in butter until softened. Add the onion, sugar, salt, and paprika to the tomato mixture.
- 3 Blend the flour with a little cold water to form a smooth paste. Stir this into the soup to thicken it.
- 4 Strain the soup through a fine-mesh sieve back into the pot. Discard solids.
- 5 Heat the milk until very hot but not boiling. Slowly stir the hot milk into the strained soup.
- 6 Serve immediately. Do not return to heat after adding milk. Substitute cream for milk for a richer flavor.
