Stewed Scallops With Orange Butter Sauce

Ingredients

  • Scallops in the shell
  • 1 cup white wine
  • 1 cup water
  • Salt to taste
  • 1 tbsp elder vinegar
  • 2-3 whole cloves
  • 1 piece large mace
  • 1 tbsp sweet herbs, chopped
  • Butter, melted
  • Juice of 2-3 oranges

Method

  1. 1 Boil scallops in white wine, water, and salt until cooked. Remove from shells.
  2. 2 Stew scallops with reserved liquor, elder vinegar, cloves, mace, and chopped sweet herbs until well combined.
  3. 3 Arrange scallops in shells, top with beaten butter and orange juice, and serve.
