Stewed Salmon With Homemade Mayonnaise

Ingredients

  • 1/2 cup white wine
  • sliced carrots
  • sliced onions
  • mushrooms
  • pepper
  • salt
  • mace
  • chopped sweet herbs
  • fresh salmon fillet
  • additional white wine
  • 2 egg yolks
  • Cayenne pepper
  • vinegar
  • 2 tablespoons sweet oil (vegetable oil)
  • spinach juice or chopped parsley/tarragon (optional)

Method

  1. 1 Combine 1/2 cup white wine, sliced carrots, onions, mushrooms, pepper, salt, mace, and chopped sweet herbs in a stew-pan.
  2. 2 Add the salmon fillet and pour additional wine over it. Cover and stew slowly for about 1 hour.
  3. 3 Whisk egg yolks with salt, Cayenne, and a little vinegar. Slowly drizzle in oil while stirring constantly until emulsified.
  4. 4 Stir in more vinegar to taste. Add spinach juice or herbs if desired. Serve salmon with the cooking liquid and mayonnaise.
