Stewed Rockfish With Oysters And Herbs

Ingredients

  • 1 rockfish (approx. 6 lbs)
  • Salt and pepper to taste
  • Cayenne pepper (pinch)
  • 1 cup water
  • Mace or cloves (pinch)
  • ¼ lb butter
  • ½ cup flour
  • Fresh parsley and thyme (chopped)
  • 1 pint oysters

Method

  1. 1 Rub the fish inside and out with salt, pepper, and a pinch of cayenne. Place it in an oval stew-pan.
  2. 2 Add 1 cup of water to the pan. Cover and simmer for about 30 minutes.
  3. 3 Season with salt, pepper, and a pinch of mace or cloves. Continue cooking until the fish is nearly done.
  4. 4 In a separate bowl, rub the butter into the flour until combined. Stir in chopped parsley and thyme.
  5. 5 Add the butter-flour mixture and the pint of oysters to the stew-pan. Stir gently and cook until the sauce thickens and oysters are curled.
  6. 6 Serve the fish and gravy immediately in the serving dish.
