Stewed Rhubarb Bread Crumb Meringue

Ingredients

  • 3 cups stewed rhubarb
  • sugar to taste
  • 2 oz butter
  • 3 oz dried bread crumbs, finely rolled
  • juice and zest of ½ lemon
  • 3 egg yolks
  • 3 egg whites
  • ¾ cup granulated sugar

Method

  1. 1 Combine stewed rhubarb, sugar, butter, bread crumbs, and lemon juice/rind in a saucepan over heat until hot.
  2. 2 Remove from heat and stir in egg yolks. Pour mixture into a pudding dish.
  3. 3 Beat egg whites to stiff peaks, then gradually add sugar until stiff and glossy.
  4. 4 Spread meringue over rhubarb. Place dish in a pan of hot water in a 350°F oven.
  5. 5 Bake for 10-15 minutes until meringue is set. Serve cold with cream.
