Stewed Rhubarb Bread Crumb Meringue
Ingredients
- 3 cups stewed rhubarb
- sugar to taste
- 2 oz butter
- 3 oz dried bread crumbs, finely rolled
- juice and zest of ½ lemon
- 3 egg yolks
- 3 egg whites
- ¾ cup granulated sugar
Method
- 1 Combine stewed rhubarb, sugar, butter, bread crumbs, and lemon juice/rind in a saucepan over heat until hot.
- 2 Remove from heat and stir in egg yolks. Pour mixture into a pudding dish.
- 3 Beat egg whites to stiff peaks, then gradually add sugar until stiff and glossy.
- 4 Spread meringue over rhubarb. Place dish in a pan of hot water in a 350°F oven.
- 5 Bake for 10-15 minutes until meringue is set. Serve cold with cream.
