Stewed Oysters In Spiced Vinegar
Ingredients
- large oysters
- water
- salt
- blades of mace
- whole black pepper
- pale vinegar
Method
- 1 Select large oysters, drain liquor, and wash in clean water. Remove any shell pieces.
- 2 Place oysters in a stew pan with water, salt, blades of mace, and whole black pepper.
- 3 Stew oysters for a few minutes, then transfer to a pot to cool completely.
- 4 Once cold, add pale vinegar until the liquor has an agreeable acid taste.
