Stewed Oysters In Spiced Vinegar

Ingredients

  • large oysters
  • water
  • salt
  • blades of mace
  • whole black pepper
  • pale vinegar

Method

  1. 1 Select large oysters, drain liquor, and wash in clean water. Remove any shell pieces.
  2. 2 Place oysters in a stew pan with water, salt, blades of mace, and whole black pepper.
  3. 3 Stew oysters for a few minutes, then transfer to a pot to cool completely.
  4. 4 Once cold, add pale vinegar until the liquor has an agreeable acid taste.
