Stewed Lobster With Gravy And Wine
Ingredients
- 2 fine lobsters
- 1/2 pint gravy
- 1/4 cup white wine
- 1 pinch beaten mace
- Cayenne pepper to taste
- Salt to taste
- 1 tsp ketchup
- 1 tsp anchovy liquor
- 1 tbsp butter
- 1 tbsp flour
- Lemon wedges
Method
- 1 Boil lobsters briefly, then remove meat from claws and tails, keeping pieces whole.
- 2 Cut tails in half and add all lobster meat to a stewpan.
- 3 Add gravy, wine, mace, cayenne, salt, ketchup, anchovy liquor, and butter rolled in flour.
- 4 Cover and stew gently for 20 minutes, shaking the pan frequently to prevent sticking.
- 5 Squeeze in lemon juice, then serve the meat and sauce garnished with broiled lobster chines.
