Stewed Lobster With Gravy And Wine

Ingredients

  • 2 fine lobsters
  • 1/2 pint gravy
  • 1/4 cup white wine
  • 1 pinch beaten mace
  • Cayenne pepper to taste
  • Salt to taste
  • 1 tsp ketchup
  • 1 tsp anchovy liquor
  • 1 tbsp butter
  • 1 tbsp flour
  • Lemon wedges

Method

  1. 1 Boil lobsters briefly, then remove meat from claws and tails, keeping pieces whole.
  2. 2 Cut tails in half and add all lobster meat to a stewpan.
  3. 3 Add gravy, wine, mace, cayenne, salt, ketchup, anchovy liquor, and butter rolled in flour.
  4. 4 Cover and stew gently for 20 minutes, shaking the pan frequently to prevent sticking.
  5. 5 Squeeze in lemon juice, then serve the meat and sauce garnished with broiled lobster chines.
