Stewed Golden Pippin Apples
Ingredients
- finest pippins (apples)
- cold water
- ½ pound sugar
- 1 pint water
- lemon peel
- lemon juice to taste
Method
- 1 Peel apples thinly and place in cold water to prevent browning.
- 2 Boil sugar and water to make a syrup, then skim.
- 3 Add apples and lemon peel to the syrup; keep heat brisk.
- 4 Spoon syrup over apples as they boil to keep them clear.
- 5 Cook until a straw passes through easily; remove apples to a bowl.
- 6 Boil remaining syrup until thick, then pour hot syrup over apples.
