Stewed Golden Pippin Apples

Ingredients

  • finest pippins (apples)
  • cold water
  • ½ pound sugar
  • 1 pint water
  • lemon peel
  • lemon juice to taste

Method

  1. 1 Peel apples thinly and place in cold water to prevent browning.
  2. 2 Boil sugar and water to make a syrup, then skim.
  3. 3 Add apples and lemon peel to the syrup; keep heat brisk.
  4. 4 Spoon syrup over apples as they boil to keep them clear.
  5. 5 Cook until a straw passes through easily; remove apples to a bowl.
  6. 6 Boil remaining syrup until thick, then pour hot syrup over apples.
