Stewed Fish With Cracker Gravy
Ingredients
- firm fish, cut into 6-inch pieces
- salt and pepper
- salt pork, half-boiled and sliced
- onion, chopped
- crackers, soaked in milk
- white wine, ½ cup
- water, ½ cup
- flour
- butter, 1 tbsp
- parsley, chopped
Method
- 1 Season fish pieces with salt and pepper. Line a Dutch oven with half-boiled salt pork slices.
- 2 Place fish in the pot, scattering chopped onion between pieces. Top with crackers soaked in milk.
- 3 Pour ½ cup white wine and ½ cup water over the mixture. Cover and stew gently for 1 hour.
- 4 Remove fish carefully to a serving dish. Thicken the pot juices with flour and 1 tbsp butter.
- 5 Stir in chopped parsley and boil briefly. Pour the thickened gravy over the fish and serve hot.
