Stewed Duck With Olives
Ingredients
- 1 whole duck
- 2 tbsp butter
- salt and pepper to taste
- ½ cup water
- ½ cup olives, halved and pitted
Method
- 1 Lard the duck with strips of fat. Place in a pot with butter, pepper, salt, and a little water.
- 2 Stew the duck whole until nearly done, basting occasionally.
- 3 Halve the olives and remove the pits.
- 4 Add the olives to the pot and stew together for about 5 minutes.
- 5 Serve the duck with the olives arranged around it.
