Stewed Duck With Olives

Ingredients

  • 1 whole duck
  • 2 tbsp butter
  • salt and pepper to taste
  • ½ cup water
  • ½ cup olives, halved and pitted

Method

  1. 1 Lard the duck with strips of fat. Place in a pot with butter, pepper, salt, and a little water.
  2. 2 Stew the duck whole until nearly done, basting occasionally.
  3. 3 Halve the olives and remove the pits.
  4. 4 Add the olives to the pot and stew together for about 5 minutes.
  5. 5 Serve the duck with the olives arranged around it.
