Stewed Duck With Bacon And Peas
Ingredients
- 1 whole duck, trussed
- 2 tablespoons butter
- 4 ounces streaky bacon
- 1 tablespoon flour
- 1 quart water
- 20 small onions
- 1 bunch parsley
- 1 bay leaf
- 2 cloves
- 1 cup peas
- Salt and pepper to taste
Method
- 1 Place the trussed duck and bacon in a large stewpan. Add butter, flour, water, onions, parsley, bay leaf, and cloves. Stir gently to combine.
- 2 Bring to a simmer and cook until the duck is tender, approximately 1.5 to 2 hours. Add the peas during the last 15 minutes of cooking.
- 3 Remove the duck from the pot and discard the trussing strings. Remove the parsley bunch, bay leaf, and cloves from the sauce.
- 4 Season the sauce with salt and pepper. Serve the duck with the sauce poured over it.
