Stewed Duck With Bacon And Peas

Ingredients

  • 1 whole duck, trussed
  • 2 tablespoons butter
  • 4 ounces streaky bacon
  • 1 tablespoon flour
  • 1 quart water
  • 20 small onions
  • 1 bunch parsley
  • 1 bay leaf
  • 2 cloves
  • 1 cup peas
  • Salt and pepper to taste

Method

  1. 1 Place the trussed duck and bacon in a large stewpan. Add butter, flour, water, onions, parsley, bay leaf, and cloves. Stir gently to combine.
  2. 2 Bring to a simmer and cook until the duck is tender, approximately 1.5 to 2 hours. Add the peas during the last 15 minutes of cooking.
  3. 3 Remove the duck from the pot and discard the trussing strings. Remove the parsley bunch, bay leaf, and cloves from the sauce.
  4. 4 Season the sauce with salt and pepper. Serve the duck with the sauce poured over it.
