Stewed Cauliflower With Tomatoes And Parmesan
Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1/4 teaspoon garlic powder
- 1 head cauliflower, cut into 2-inch florets
- 2 large tomatoes, chopped
- 1/2 teaspoon ground black pepper
- 1 tablespoon dried parsley
- 1/4 cup grated Parmesan cheese
Method
- 1 Chop the cauliflower into 2-inch pieces. Place in a pan with 1 inch of water, cover, and boil for 3 minutes. Drain.
- 2 In a large pan, heat oil over medium heat. Add chopped onion and cook for 3 to 5 minutes until softened.
- 3 Add garlic powder and the boiled cauliflower. Stir and cook for 3 minutes until lightly browned.
- 4 Stir in chopped tomatoes and black pepper. Cook for 5 more minutes until tomatoes soften.
- 5 Serve topped with dried parsley and grated Parmesan cheese.
