Stewed Cauliflower With Tomatoes And Parmesan

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1/4 teaspoon garlic powder
  • 1 head cauliflower, cut into 2-inch florets
  • 2 large tomatoes, chopped
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon dried parsley
  • 1/4 cup grated Parmesan cheese

Method

  1. 1 Chop the cauliflower into 2-inch pieces. Place in a pan with 1 inch of water, cover, and boil for 3 minutes. Drain.
  2. 2 In a large pan, heat oil over medium heat. Add chopped onion and cook for 3 to 5 minutes until softened.
  3. 3 Add garlic powder and the boiled cauliflower. Stir and cook for 3 minutes until lightly browned.
  4. 4 Stir in chopped tomatoes and black pepper. Cook for 5 more minutes until tomatoes soften.
  5. 5 Serve topped with dried parsley and grated Parmesan cheese.
